Cooking courses

Castello di Proceno cooking school provides an unique setting where guests can learn the secrets of authentic Italian cuisine
in its local, regional and creative evolution.

The cooking courses can go on for one to three days, are held on request, and offer a splendid chance to immerse oneself in the unique lifestyle and hospitality of a 1000 year old little village grown around its Castle while savouring the fantastic tastes and sights that this beautiful and sometimes unknown region called Tuscia offers.



The lessons are taught by the owner Cecilia and by the Chef Lucia together with the sommelier Claudio Sarti: our courses are usually held in English and/or Italian , in a natural easy going style and a hands on approach,  guests are guaranteed to bring back a recipe book with great authentic Italian recipes and menus to be used year round for all occasions, a memory that they will keep in their heart forever.

In each class, students, through a hand’s on teaching method, are taught how to prepare a full menu including appetizers, first and second courses, side dishes and desserts. The classes are held in the family old kitchen where enticing aromas and flavours, which characterize traditional Tuscia cooking, are enjoyed. Special attention is also given to wine appreciation and to how best combine wine and food.
